The Relisher is where the world’s top chefs reveal their favorite restaurants in their hometowns. This week, I met with three-Michelin-starred chef Paolo Casagrande of Lasarte Restaurant in Barcelona.
“Over the last 30 years, Catalonia has become a culinary capital, much like San Sebastián, but with its own creative flair. The Roca brothers, the chefs behind the three-Michelin-starred El Celler de Can Roca, have played an important role in shaping Barcelona's culinary identity, as many of the city’s top chefs trained at their restaurant—including myself.
Today, Barcelona is on fire. Now, more than ever, there are very, very good restaurants, a lot of talent, and many young chefs. We are also very lucky to be in Catalonia because of the products we have, which allow us to create very different types of cuisine. Although it’s a small city, it’s incredible how many important, world-renowned restaurants are located here.”
