Welcome to the second edition of The Relisher’s Tokyo series! This week, I sat down with three-Michelin-starred Executive Chef Olivier Chaignon of L'Osier in Tokyo.

Chef Chaignon, who has been living in Tokyo for the past 20 years, trained at Michelin-starred restaurants across France, London and Tokyo. In 2013, he was appointed Executive Chef of L'Osier, and since 2018, he has consistently maintained three Michelin stars. Most recently, he designed the Business Class and La Première (First Class) in-flight menus for Air France.

Below, the local chef shares his favorite restaurants in Tokyo—from sushi and kaiseki to tempura and ramen. He also reveals his go-to sake bar, favorite Japanese sweets shop, and more. A Google Map with all the locations is included at the end of the article.
