The Relisher is where the world’s top chefs reveal their favorite restaurants in their hometowns. This week, I met with Lionel Beccat, the executive chef of two-Michelin-starred ESqUISSE in Tokyo.
“Talking about Japan is something I take very seriously because this is a country that changed my life and that I am completely in love with”.
Originally from the South of France, Chef Lionel moved to Japan in 2006 and is today a Japanese citizen. He became the executive chef of ESqUISSE, which opened in 2012, and has consistently held a two-star rating since the 2013 Michelin Guide Tokyo.
On a personal note, this Tokyo edition stands out as one of my favorite interviews to date. My conversation with Chef Lionel was a fascinating glimpse into Japanese culture and daily life through food.
