Welcome to The Relisher’s Copenhagen edition! This week, I met with Nicolai Nørregaard, the head chef and co-founder of Copenhagen’s two-Michelin-starred Kadeau.

A self-taught chef, Nørregaard is a pioneer of the New Nordic movement—a culinary philosophy centered on local, seasonal ingredients and traditional preservation techniques. Through these methods, he has pushed the boundaries of innovation, redefining what fine dining can be.
