Welcome to The Relisher’s Rome edition! This week, I met with Sarah Cicolini, one of Rome’s top young chefs and the chef-owner of Santo Palato trattoria.

Sarah is best known for her perfectly creamy carbonara, with yolks so rich that The New York Times and The Los Angeles Times have praised Santo Palato for serving some of the best carbonara—and tripe—in Rome. Her restaurant was also featured in Stanley Tucci: Searching for Italy.
